OK, time to start up the first part of Mrs J’s version of the Mont Blanc – the cream.
Mrs J doesn’t even need a canopener for this one.
Coconut cream, sweetened condensed milk, a vanilla pod and some dried coconut later….
It is SWEET. No doubt about that. Yummy though….
Mrs J was slightly surprised to have to use a fair amount of flour to thicken. Probably you need less if the coconut milk itself is creamier.
Also…
Apologies to Robin, but Mrs J simply refuses to use treated lime rind. She went ahead with the lemons, and used a bit more instead.
So, cream is cooling happily in the fridge. Mrs J did a big batch so with a bit of luck there could be a fringe-dessert in Mr J’s future.
But first the cake has to be assembled…. the adventure continues!
