This evening Mrs J was attacked by a sugar demon.
Mrs J doesn’t keep chocolate, sweets and ice cream in the house (usually) for precisely this reason. To thwart the demon.
But it was a major one.
Like a sugar black hole y’all. It just sucked her right up.
And so she had to make some cake.
The demon was on her back to be quick about it too, so she decided to make a simple variation with some raisins and walnuts.
Soak the raisins for a few minutes in a bit of brandy.
This will enhance the taste and also help prevent the raisins that don’t sink into the cake later from burning too much. Chop walnuts roughly.
Take butter, sugar and a generous amount of vanilla sugar (in this case, from a couple of packets).
Combine in bowl until it looks kind of fluffy. Add eggs one by one. Mrs J used 4 eggs to 200 grams of butter and 2 dl of sugar.
Mix flour and baking soda (Mrs J used roughly 2 teaspoons of baking soda to 4 dl of flour) and mix into sugar-butter-eggs. Coerce mixture into baking dish (it’s going to be pretty thick) and add chopped nuts and soaked raisins on top, pressing them into the mixture. It’s good to press it in quite a bit because although you want some of it to pop out during baking (it looks nice) some should really stay in the actual cake.
Bake at 175°C for up to 50 min, depending on the shape of the dish.
Mrs J didn’t even stop to take a picture before shoving a piece into her mouth. Weak, Mrs J, weak!
At least the sugar demon is gone.
