There was only one thing for sure today. There was going to be something with leeks for dinner.
Why, you ask?
Because Mrs J had intended to buy one small leek for a fish dish but as it happens nearly a kilo of them arrived in her kitchen. It wasn’t her fault. It wasn’t Mr J’s fault, either. Ergo, must be the fault of modern technology.
Let’s say it was, anyway.
However, a leek solution seemed to be needed.
So Mrs J goes down to trusty Mr Freezer to have a look and discovers some frozen grated cheese (yes!) but also a bag of broccoli that needs to be eaten (problem!).
She gives trusty Mr Fridge a poke and discovers butter and fresh eggs (yes!) but also a piece of Roquefort cheese that is about to grow legs and leave said fridge if not eaten within the immediate future (problem!).
Suddenly the leek situation was less urgent somehow.
And so tonight we have broccoli and Roquefort pie.
Dough in process(or), 125 grams of butter to 3 dl of flour. A couple of dashes of water. 20 seconds blitzing.
Roll out and/or press into pie dish. Cool for 30 min in Mr Fridge. Precook at 200°C for 10 min. It slides down the sides of the dish slightly and bubbles in the middle a bit. If you’re up for fancy-dancy cooking you can use some aluminum foil and some dry rice or peas to hold it on the sides and down in the middle.
Tonight, Mrs J was hungry enough not to care.
Take broccoli, cook for 2 min, drain.
Put broccoli in pie shell, add Roquefort cheese.
Add other grated cheese if you don’t have enough Roquefort. Mrs J used about 100 grams of Roquefort and 60 or so grams of gratin cheese (Emmenthal-ish).
Mix eggs with milk, salt and pepper. In this case, Mrs J used 4 eggs to 2.5 dl of semi skimmed milk. Add salt and pepper. Pour into shell.
Cook for 35-40 minutes at 200°C. Keep watch. You want it well browned but if you have an ambitious oven it might burn the crust, which you do not want.
Let set for a few minutes and serve. Maybe add some salad, but you don’t really need it, unless it’s for guests you’d like to impress. Mrs J had it in front of the TV, and it was just right for that, sans salad.
Mrs J has known people that can’t stand broccoli. She’s also known people that can’t stand blue cheese. Maybe this pie is just the shock therapy you need? She’d love to know if anyone decides to try!







My kids looove Broccoli. Because it’s a funny word and because it comes in a pie 🙂 Mine is baked with feta cheese, cream and eggs. Sometimes I add other veggies too (that like your fridge content is about to sprout legs).
