The chocolate bonanza continues, as promised, with Mrs J’s triple threat chocolate cake. Start with your regular cake batter, beating 4 eggs with 4 dl caster sugar until fluffy.
Separately, mix 6 dl of flour with 4 tsp baking powder. Add 4 tsp vanilla sugar.
Now comes the chocolate! Starting with 6 tbsp of cocoa powder.
Roughly chop 100 g dark chocolate and 100 g white chocolate. Add to dry ingredients. Mix well again.
Melt 100 g butter. Add butter, all dry ingredients and 2 dl of water to egg mix. Stir, but only until flour mix and eggs are combined. There should be some lumps in there (of chocolate!).
Butter and bread a couple of cake tins. Slap in the batter (the tin should be about 2/3 full). Bake at 175°C for 45-50 min depending on the shape of your tin(s). Check at the end with a knife. Let cool for 30 min or so before turning out of the tin and cutting.
Serve freshly baked and still a little warm as a dessert with vanilla sauce or whipped cream. Vanilla ice cream would be good too.
If by chance there are any leftovers they are great as they are with a cup of coffee or tea… Yummylicious!
