Yesterday, Mrs J got lost. Badly lost. Her boots got muddy. She found herself climbing through dark catacombs. Sweating up long stairs to get to the top of medieval towers.
She almost got mugged, probably. Cause it was really dark. And everyone she could ask for the way out looked really dodgy. They kept telling her to go back down the dark alley/stairs where she came from.
Eventually (not to mention embarrassingly) she had to be rescued by her friends.
This has happened to Mrs J before. And probably will happen again. She has no sense of direction. This skill is missing from her DNA. Which means it’s not really her fault. Kind of.
But in honour of this lack of brainpower, here’s a recipe for peanut squares.
Combine 2.5 dl of water, 1.25 dl of sunflower oil and 1.5 dl of peanut butter
with 120g of unsalted butter in a pot. Cook over medium heat, stirring constantly, until smooth.
Combine 2.5 dl of flour with 1 tsp of baking soda and 2 dl of sugar in a large bowl. Make sure to keep any cats out of bowl.
Add 2 large eggs, 1.25 dl milk, and 1 tsp of vanilla extract. Mix with an electric mixer until only just blended. Add peanut butter mixture and mix until smooth (but not overly much).
Pour into a greased and breaded pan. Cook at 200°C for 25-30 min. Check with a knife at the end to make sure it comes out dry. Let cool completely.
For an additional peanut frosting, combine 1.25 dl of peanut butter with 120g of margarine and 0,5 dl of milk in a saucepan. Cook over medium heat, stirring constantly, until smooth. Sift in 0,5 dl of powdered sugar and 1 tsp of vanilla extract. Stir until smooth and spreadable. Let cool a little.
Pour over cooled peanut cake. You can cut the squares before or afterwards, as you like. It should be a fairly thin glaze, so if you cut them before it will get more into and over the side of the individual squares.
Oh and by the way? Mrs J did her little tour of dark alleys carrying a perfectly viable GPS enabled phone. She’s now more than qualified for the title of senior peanut, don’t you think?
