Don’t have enough candy lined up for Christmas? Have an urgent need to bump up your caloric intake? Or just think you might just require another sugar shot to survive the day?
Mrs J has the solution for you, in the form of the recipe for the crumbly caramel squares that Mrs B helped her make today.
They don’t taste as sweet as you might think while mixing in all that sugar, but people with bad teeth are hereby warned to eat with care!
Start by preparing your first dry mix, combining 5 dl of flour, 6 dl of oats, 1/2 tsp baking soda and 1/2 tsp of salt.
In a big bowl then mix 2 and 1/4 dl brown sugar, 2 tsp vanilla sugar and 50g melted butter. Add a whole large egg. Mix well. Then add your flour and oats mix. Mrs J would recommend to use hands directly in the mix (well cleaned, of course). You should get a nice crumbly mass at the end.
Get about 3 dl of some fairly firm but kind of chewable caramel candy. Try not to eat them immediately.
Instead, melt them with 3 dl of sweetened condensed milk. Use the microwave if you like, but make sure you watch it carefully and stir every 15-20 seconds. When candy is melted and smooth combined with the milk add 1 1/2 dl of chopped walnuts.
Throw 3/4 of the oats crumble mix into a baking pan on top of a baking sheet and push it down so it sticks together a bit and forms a base.
Try to spread the caramel mix on top of the base as evenly as possible. The base tends to break up if you try pushing around the filling, so try to pour it slowly in parts on to where you want it rather than dumping all of it in the middle.
Toss the rest of the oats crumble evenly on top and push it into the caramel mix a little.
Bake at 175°C for 30 minutes until the top is a bit browned.
Let cool enough to handle before cutting in squares.
Eat as candy or with coffee or tea. Or why not a glass of milk?
