Truth be told, Mrs J would love to be able to change things up a bit right now. She’s had two weeks of fun at home. She’d love some outdoor activities.
One could say, she’s going a bit bananas.
But as the saying goes, if you get a lemon, make lemonade. So if you’re going bananas, make …. banana chili?
Mrs J gave it a go. Here’s what you need:
- Appx. 400g mixed minced beef and pork
- Some olive oil
- Canned red beans (about 3,5 dl worth)
- 400g tomato passata
- 400g diced fresh tomatoes
- A large chopped onion
- 1 chopped up or mashed banana
- 2 cloves of chopped garlic
- 1/2 tsp. chili powder
- 2 tbsp. soy sauce
- 1/4 tsp sambal oelek
- 1/4 tsp cayenne pepper
- 1 tbsp sweet chili sauce
- 1 dl water
Brown the minced meat and transfer to a pot.
Brown the onions and add to the meat.
Add everything else and stir.
Give it all a boil and then cook on low heat for at least 90 minutes, up to 2 hours. Let cook under a lid for the first hour, then remove the lid to get your desired consistency.
Season with some salt, if you think it needs it. Serve with a few extra slices of banana.
