It’s Sunday and definitely time for a treat. Mrs J decided on a trifle and we’re going blueberry peanut. Because Mrs J still had a last couple of peanut squares in the freezer.

Make this in a big glass trifle bowl if you have one, or if not it’s just as easy to make them as individual trifles. That’s what Mrs J did here.

Also, she cheated and used vanilla custard made from a powder. Making your own custard isn’t hard, but if the sugar demon is on your back, time is of the essence. So go ahead and cheat, Mrs J certainly won’t tell.

Make up your custard (either your own or by following the manufacturer’s instructions) and allow it to cool. Then make up some strawberry jelly (also following instructions on the packet). Allow it to cool so that it is just starting to set. Using jelly that is beginning to thicken will protect the cake base from becoming too mushy.

Cut your cake or sponge into strips or cubes. Mrs J didn’t bother to thaw the cake in advance.

Place a layer of cake in the bottom of your glass bowls. Add a couple of tablespoons of blueberries. Mrs J used frozen blueberries (without sugar) and happily threw them in also without thawing them first.

Pour your semi-liquid jelly into the bowl so that it soaks the cake and just submerges some of the blueberries. Save in the fridge until the jelly has set. Throw in some more blueberries at this point if you like more fruit. Or cake, if you like cake. Mrs J likes both.

Then add a layer of custard.

Whip some cream. It should keep shape but not be too stiff. Add a little bit of sugar to sweeten it.

Spread evenly over the top of your trifles. Add some almond slivers.

Check out the nice colours. That’s why it makes sense to make this in glass bowls.

Mrs J’s tip – if you’re doing this for a dinner party you can do everything in advance except adding the cream and the almonds at the last minute. If you want more precise layers (more important if you’re trying to show off making it in a big bowl) you need to keep the fruit and jelly together in one even layer and be careful to let the jelly set completely before adding the custard.
