Somehow, breakfast seems to be the meal that most people change the least. And feel the most attached to. As in, they want their type of breakfast. Every day. No new stuff, no risktaking. Bitte and please, s’il vous plait.
Mrs J didn’t really have breakfast until she hit her thirties. And then only because she forced it down when she realized it was the key to eating more at dinner without gaining tons of weight. True story.
Some years later now, she actually enjoys breakfast. To the eternal surprise of friends and family. Her mother (who served her daughter breakfast in bed for years and years in the maternal hope that she might actually eat something before school) thinks she’s been abducted by aliens and replaced by a breakfast-loving clone. Mr J thinks he’s dreaming when she tucks away sausage, eggs and beans. Her step-father-in-law watches her chow down yoghurts, ham, cheese and bread while he recalls finding the breakfast sandwiches he kindly made in the bin. With itsy bitsy tiny girl-bites in them.
The staples of Mrs J’s breakfast today are juice and Earl Grey tea.
Earl Grey, hot, is one love Mrs J has in common with Captain Picard.
The thought of that can make her smile unexpectedly in the morning.
Otherwise, Mrs J’s all time favorite breakfast food is pancakes. The American fluffy kind. She makes them plain, with fresh fruit, dried fruit, nuts …. the variations are endless. That’s one of the many reasons why she likes them so much.
Today she made raspberry and banana pancakes.
She only needed breakfast for herself but since it’s hard to crack half an egg, she made a bit more. The batch will probably serve two adults and a child.
Slice a banana and thaw your raspberries. (Unless you have fresh raspberries in March where you live.)
Start the batter with 1.5 dl of flour. Mrs J likes to use 50-50 regular white flour and wholegrain flour. However she was plum out of wholegrain today so she used all regular white and instead added two tsp of whey protein powder. Mix in 1 tsp of baking powder, 1/2 a pinch of salt and 1 good tsp of vanilla sugar with the flour.
Pour in 1.5 dl of semi skimmed milk and mix until there are no lumps left. Add an egg and mix again.
Melt 1 good tbsp of butter. Mrs J melts it in a glass in the microwave (on low power to keep it from splattering all over the microwave).
Add to your batter and mix until smooth and shiny.
Cook your pancakes on medium to high heat according to your preference – big pancakes, small pancakes, with or without fruit in them. Flip them when you see the bubbles.
Mrs J put some sliced bananas and raspberries on hers today, ’cause she felt like it.
When done they may look a bit funky on the flip side, but if the fruit is cooked with the pancake it tastes different. And you’ll always serve them good side up anyway.
