People that were born with a clear vision of their passion, or found their passion easily and early in life, might struggle to understand the frustration of someone who hasn’t found it yet.

It may sound kind of strange – or indulgent – to say you’ve been spending months looking for your passion. Especially if you still haven’t really found it.

Mrs J will keep at it.

And in the meantime, here’s a passionfruit dessert. Just promise to be patient when making it!

Soak three leaves of gelatin in water. Cut six large passion fruits in half and scoop out the flesh and seeds. Use a sieve to remove the seeds and the fibre of the flesh. Add two tablespoons of fresh orange juice and the rind of one lemon.

Whip together three eggs with 3/4 dl of sugar until fluffy.

Bring the fruit mixture to the boil together with another 3/4 dl of sugar and 100g of butter.

Pour the hot fruit mix slowly into the egg mix while whisking and then return to the pot to warm, carefully, until just brought to the boil while still whisking vigorously. It should now go thick and have the color of a gorgeously yellow sunset.

Add the gelatin, with whatever water comes with it, and whisk again to make sure it melts and mixes.

Pour the fruit curd into a bowl and chill.

Whip 3 dl of whole fat cream. When the passionfruit curd has cooled, combine it with the whipped cream and distribute in individual shells of sugar dough or ready made short crust shells.

Add fresh fruit or decorate as you like.
