Today the cat sitters arrived. Because the cat sitters are very nice, both to cats and to Mrs J, she decided to try something new on them for dinner. So here’s Mrs J’s take on a cool three rice salad with orange and mango.
Get two oranges and remove the peel and the white membrane as much as you have the patience for, using whatever method you prefer. Mrs J peeled, cut, ringed and cut again. Set the finished pieces of orange aside.
You should try to catch the juice from the oranges while you’re doing the cutting etc. But if you’re a klutz like Mrs J, you may want to have some good orange juice on hand to top up. You need about 2/3 dl in total. Press two limes and add the lime juice to the orange juice. Add about 3 tbsp of sunflower oil and 1 tsp of salt. Whisk and set the juice mix aside.
Press another lime into a separate bowl. Dice one and a half ripe mangoes and coat with the lime juice. Keep this to the side.
Cook your rice. Mrs J used 4 dl of mixed red, black and white rice. Not really for the taste, but more for the texture and the look. If you want to use all white, brown or other types of rice, go for it.
When your rice is cooked (cooking time depending on the type of rice you use) make sure it’s well drained. Then add the lime and orange juice mix and combine gently before spreading the rice out on a tray or baking dish to cool.
While the rice is cooling, chop one red onion and six salad onions quite finely.
Also, finely chop one chili fruit and about 2 1/2 dl of fresh coriander.
Just before serving, mix fruit, chili, rice and everything together. Add salt and additional lime juice to taste. Finally add 2 dl of unsalted peanuts.
Serve with a piece of steak or maybe something grilled? Nice, fruity, summery!
