Mrs J’s favourite pizza is a stone-oven baked feast of hot pepperoni, garlic and gorgonzola. It’s only a click and a phonecall away. Except on Mondays. Yes, sadly, on Mondays la “Bella Calabria” is closed.

Then again the Monday closing is perhaps not such a bad thing. On any other day Mrs J would be changing into her running gear and going for a long one before indulging her pizza craving. But she usually doesn’t do anything that resembles cardio exercise on Mondays. And really it makes sense to have that kind of pizza as a reward after a good hard workout.

The following is not a pizza. If you think of it as pizza you’re going to be disappointed. But if you think of it as a flat pie, flatbread sandwich, or hot knäckebröd topped with chicken and cheese it’s a rather good substitute. Even on a Monday.

What Mrs J did serves two couch potatoes and the dough is made without yeast. Primarily because Mrs J didn’t have any yeast at home and she didn’t feel like going to the shop.

Since there will be no proofing, start by setting your oven to 175°. It needs to be good and hot when you’re ready to bake your flatbreads. You might even use that tile, or a pizza stone if you have one.

Combine 130g of whole wheat flour with 1 tsp of baking powder. Add 1/2 tsp of salt and 1 tsp of any combination of dried herbs you might fancy. Oregano, Thyme, Rosemary or Herbes de Provence mixes come to mind. Add 30g of olive oil and 90g of water and mix until the dough lets go of the sides of the bowl. Split into two equal sized balls and roll out between oven paper until nice and thin. Make round, oval or square shapes – whatever you like! Carefully remove the top sheet. Dab a little bit of olive oil on top and bake for 5-10 minutes.

While the breads bake prepare your toppings. Leftover chicken breast, cut in cubes, is a good one (make sure you taste the meat and add some salt and pepper if it’s too bland).

Maybe some grilled aubergine and zucchini? By all means use fresh or canned vegetables – just make sure they’re not too wet, or your bread will get soggy.

You will need cheese. Cheese is good, any day of the week.

Spread some tomato sauce on the precooked breads.

Pile on your toppings. Add cheese. Send back into the oven for another 10 min and voilà, your individual hot sandwich/pies are done!
