Pomegranates are fantastic. In the Egypt of old, pomegranate was regarded as a symbol of prosperity and ambition. It was also used to treat infections and other yucky stuff.
While all the health benefits of pomegranates are yet to be proven, it’s safe to say they’re rich in vitamin C. And that they’re excellent for adding that festive feeling to any dish, by means of those deep red jewels of colour and sweet. Mrs J loves to use them during the holiday season.
Case in point, this is a regular chicken salad.
Lettuce, iceberg, carrots, slow cooked chicken, apple, red onion, some lemon juice and a french herb vinaigrette dressing. With half a pomegranate scattered on top it looks (and tastes) like a feast.
In America Thanksgiving is coming up. Which really kicks off the “holiday season” in the Western Hemisphere. Being Scando, Mrs J’s Thanksgiving isn’t marked as a big family feast. It’s not a Scando tradition. But Thanksgiving coincides with a big reason for Mrs J to be Thankful – Mum’s Birthday.
Obviously, it’s not Thanksgiving/Mum’s Birthday just yet. But this post is dedicated to her anyway. Why? Because Mrs J’s Mum knows how to get a party feeling going, any day of the year, regardless of the circumstance.
