Everything was under control when the alarm rang this morning. And then Mrs J heard a groan.

Mr J: – I don’t feel so well….

Mrs J: – Where does it hurt?

Mr J: – Everywhere…..

Bad news for Mr J, but will be good news for victims that were so unsuspecting that even Mrs J didn’t suspect they would be having Mont Blanc cake this weekend.

Because the thing is….

The look is right, the taste should be about right. User friendly? – remains to be seen.

Mrs J has modified the recipe, so it’s definitely no longer authentic. Not only did she use lemon rind instead of lime, but after careful consideration she also added lemon juice to the base of the cake, to break even more of the sweetness. Mind you, this thing is still VERY sweet!

There was also plenty bits and pieces left over for attempting something special for dessert tonight. Mmmmm…

From now on this concoction will be known as ‘Mrs J’s Caribbean Dream Trifle’.  Doesn’t it look cute?
